Portland Home Chef knows that a business can be part of the solution
to the problem of environmental destruction. From the earth to table,
Portland Home Chef takes every care to support local agriculture
and reduce waste.
Chef’s Garden
Portland Home Chef maintains its own country garden chock full of
fresh fruits and vegetables. This year we’re growing fresh
greens, tomatoes, carrots, chili peppers, peppers, peas, beans,
brussel sprouts, squash, herbs, beets, pears, potatoes and blackberries,
onions, garlic, potatoes, radish, spinach, kale and chard. We maximize
the amount of phytonutrient and antioxidant values in the produce
we bring to you by harvesting your vegetables the same day we use
them in your meals. We are committed to bringing you the freshest
and finest seasonal produce.
Farm Fresh Eggs
In the future we plan to offer all the health benefits that come
with farm fresh eggs. Eggs from free range pasture raised hens may
contain 1/3 less cholesterol, 1/4 less saturated fat, 2/3 more Vitamin
A, two times more omega-3 fatty acids, seven times more beta carotene,
and three times more Vitamin E (see
www.motherearthnews.com/eggs.aspx). You can enjoy the flavor
and nutritional benefits of eggs from free range, happy, chickens.
Buy Local
Anything we do not grow in our Portland Home Chef’s garden
we will buy locally from New Seasons or farms on Sauvie Island.
We favor products that are easily recycled, do not come with a lot
of excess packaging and are produced close to home. You can always
request we use your favorite brand for a particular product.
Storage Dishes
Meals from Portland Home Chef are stored in reusable, easy to clean,
containers made of glass or Corningware®. This prevents disposable
packaging materials from ending up in our landfills.
Recycling
If you do not have the time to recycle or you have limited recycling
capabilities, Portland Home Chef can do it for you as a courtesy
and at no additional cost.
Composting
To minimize landfill use and mimic nature’s natural cycles,
all vegetable waste is collected during the cooking process and
brought to the chef’s garden to be composted on site. This
is then used to fertilize future crops and help maintain soil nutrients.
Grocery Bags
Portland Home Chef only uses reusable cloth grocery bags to reduce
waste and save Oregon forests.
